Food safety is, I think, still top priority in the food supply chain and I think for the coming years it will remain top priority in the food supply chain. But what you see more and more is that sustainability issues like food security, like child labour, like environmental issues, they become more and more important.

I believe that employees must not only be made aware of the big picture, but must also understand the vision and objectives of the organization and their responsibility vis-à-vis food safety. My experience has also shown that a well-thought-out management system to help achieve this objective is crucial.

Training plays a critical role in assuring food safety. We can take our cues from recent work done by the GFSI. With the objective to improve food safety systems across the globe, the GFSI developed a tool kit to help food suppliers meet GFSI recognised certification schemes.

I believe that the harmonisation of standards in the food supply chain is one of the most important topics within our industry. If we think back almost to 20 years ago, where the food sector started to expand the focus on food safety, we ended up with more than 100 standards for food safety management systems!

We have seen a very big change when you look at the approach of certification and audits and I think a very positive change. When we started with certification in the food supply chain it was more about inspection; we had the inspection bodies, they came in with a check list and what they did was to simply ‘tick the box’.
